Fash Drive

The caviar farming industry is highly regulated due to the fact that sturgeon are in the wild an endangered species listed under CITES, the organization that protects the export of endangered species of animals. A revolutionary caviar farm in Latvia has created a technique where caviar is harvested from live sturgeon, meaning that the fish no longer have to be killed to get the caviar out of them. This brilliant breakthrough in Latvia is helping to save the sturgeon from extinction. Another added benefit is that sturgeon that survive will produce finer quality caviar every year as they mature, so this is one of those rare and beautiful win win situations where the fish are kept in wonderful conditions and the caviar just keeps getting better.

For hundreds of years wild sturgeon have been fished from the Caspian Sea and Black Sea and killed in massive volumes for the highly priced caviar inside them. The irresponsible amounts of overfishing have led to the rapid decline in wild sturgeon numbers in the sea. Many male sturgeon have been killed in these fishing techniques as well as females. The old fashioned approach to harvesting caviar is no longer a viable possibility and the breakthrough in Latvia is a ray of light shining on a dark situation. The wild Caspian sturgeon will need 20-30 years at least to recover their numbers.

All caviar purchased these days needs to have a 20 digit code on the tin that shows that it is CITES certified, not black market caviar poached by dishonest fishermen. These stringent controls are needed if the sturgeon is to survive and thankfully international co-operation is meaning that the problem is being addressed before it is too late.

The Latvian farm raised caviar breakthrough paves the way for many other caviar farms around the world to follow suit and help to protect the sturgeon from extinction. The sturgeon has lived in our seas since dinosaurs walked the earth and it seems totally unjust that man hunting these fish for their roe should be the reason that they disappear from the genetic biodiversity of the earth. Action needs to be taken in 2009 and in the years proceeding if this majestic fish, the largest freshwater fish in the world, is to be saved from the brink of disappearance forever. The quality of the caviar produced by farm raised caviar experts is better than wild caviar in many cases because the farmed sturgeon are raised in pure artesian spring fed water in carefully controlled conditions with absolutely no chemicals or pollutants. In contrast much of the wild caviar comes from fish living in polluted rivers and seas and the sturgeon ingest all sorts of chemicals that end up in the roe. In conclusion it is fair to say that farming caviar is one of the most important industries to emerge in many years. It is also very encouraging to see the revolutionary techniques being developed to help preserve the wild sturgeon fish.
